“Gourmast,” a traditional and local dish from the village of Fahraj in Yazd Province, prepared from a blend of fresh milk and pomegranate juice, was registered in the year 1403 SH (Solar Hijri) under registration number 3136 on Iran’s National List of Intangible Cultural Heritage. This unique culinary specialty, rooted in the food traditions of the desert inhabitants, not only reflects local tastes and artistry but also demonstrates the deep connection between the region’s people and nature, particularly seasonal produce like pomegranates. The registration of this element is considered a significant step towards preserving and revitalizing the culinary heritage of rural areas and promoting the local culture of Yazd.
